Pan Fried Salmon with Garlic Sauce
Serves 4, 985kJ/235 cal per serving
Ingredients
4 Salmon steaks (about 155g/50oz each)
2 tbsp olive oil
1 red chilli, very thinly sliced
16 garlic cloves, finely chopped
½ cup finely chopped dill & sprigs to garnish
2 cups fish stock
Salt & freshly ground pepper
Method
Heat oil in a large frying pan and sauté garlic, chilli and dill for around 1 minute.
Arrange salmon on top in a single layer and season with salt and pepper.
Add stock and simmer over low heat for around 8 minutes, basting from time to time.
When fish is opaque, remove skin and transfer to a serving dish and keep warm.
Boil pan juices for about 10 minutes to reduce. Pour over fish and serve warm or at room temperature, garnished with dill sprigs.
