Baked Chicken with Orange Sauce
Serves 4, 1400kJ/335 cal per serving
Ingredients
3 skinless chicken thighs
3 skinless chicken legs
1 tbsp butter
½ cup sweet white wine
½ orange, sliced thinly
½ cup freshly squeezed orange juice
2 tbsp freshly squeezed lime juice
¼ cup apple juice
1 tbsp honey
Method
Melt butter in a large frying pan and cook chicken pieces for 4 minutes over medium heat, stirring constantly.
Place chicken in a baking dish and bake in the oven at 200C/180C fan forced oven/350F/Gas Mark 4 for 20 minutes or until cooked through.
While chicken is cooking, add wine, orange, juices and honey to the frying pan and bring to the boil. Simmer for 5-7 minutes until sauce thickens slightly.
Once cooked, return chicken to frying pan and baste with sauce ready to serve.
