Lemon Baked Salmon

Serves 4, 985kJ/235 cal per serving

Ingredients

4 salmon fillets, skin removed

2 tbsp melted butter

1 sliced lemon

1 lemon, juiced

2 tbsp chopped rosemary & 2-3 sprigs

2 tbsp chopped parsley

1 tbsp minced garlic

1/4 tsp mixed peppercorns

Black pepper


Method

Place salmon in a greased baking dish and brush with melted butter.

Mix together lemon juice, herbs, garlic and peppercorns and spoon mixture over salmon.

Arrange lemon slices on top of salmon and grind black pepper over the top. Place the rosemary sprigs in the dish around the fish.

Bake at 205C/400F/Gas Mark 6 for 15 minutes, until cooked through.
