Chicken Satay Strips

Serves 4, 1400kJ/335 cal per serving

Ingredients

2 skinless chicken breast fillets (about 300g/100oz each)

2 tbsp chunky natural peanut butter

1 garlic clove, finely grated

1 tsp curry powder

1/4 tsp soy sauce

2 tsp lime juice

Method

Mix peanut butter, garlic, curry powder, soy sauce and lime juice in a bowl to form a coating consistency, adding a dash of boiling water if necessary.

Cut chicken breast fillets into thick strips, coat with sauce and arrange on the baking sheet lined with non-stick paper, spaced apart.

Bake in the oven for 8-10 mins at 200C/180C fan forced oven/350F/Gas Mark 4 until cooked, but still juicy.

Serve warm with cucumber sticks and sweet chilli sauce or leave to cool and store in the fridge for up to 2 days.
